Ingredients
  

Meatloaf Mixture
  • 1.5 lbs ground beef 80/20 blend
  • 0.5 lb ground pork
  • 1 cup panko breadcrumbs
  • 0.5 cup milk
  • 2 eggs large, beaten
  • 1 onion diced
  • 1 tbsp Worcestershire sauce
  • 8 oz mozzarella cheese block style or thick slices
Glaze & Topping
  • 0.75 cup ketchup
  • 2 tbsp brown sugar
  • 1 onion large, sliced into rings
  • 1 bunch fresh thyme for garnish

Equipment

  • Large mixing bowl
  • Baking sheet or Roasting pan
  • Skillet
  • Pastry brush

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Soak breadcrumbs in milk for 5 minutes. Sauté diced onions in a skillet until soft, then cool.
  3. In a large bowl, mix beef, pork, soaked breadcrumbs, eggs, sautéed onions, and spices gently until combined.
  4. Form 2/3 of the meat into a base with a center trench. Place mozzarella cheese inside the trench.
  5. Cover with remaining meat, sealing edges tightly to enclose the cheese.
  6. Whisk ketchup, brown sugar, and seasonings to make the glaze. Brush half over the loaf.
  7. Top with onion rings and brush with remaining glaze.
  8. Bake for 60 minutes or until internal temperature reaches 160°F. Rest for 15 minutes before slicing.

Notes

Ensure you seal the meat tightly around the cheese to prevent leakage during baking. Serve with mashed potatoes.
