- Preheat oven to 325°F (165°C). Generously grease a 12-cup muffin tin (no liners).
- Mix 1/4 cup melted butter and brown sugar. Spoon evenly into the bottoms of the muffin cups.
- Trim pineapple rings to fit and press one into each cup over the sugar mixture.
- Beat room-temperature cream cheese until smooth. Add 3/4 cup sugar and salt. Beat in eggs one at a time on LOW. Stir in vanilla and sour cream.
- Divide cheesecake batter evenly over the pineapple rings.
- Mix graham cracker crumbs, 1/4 cup sugar, and 6 tbsp melted butter. Sprinkle over the cheesecake batter and press gently to form a crust.
- Bake for 20-25 minutes, until edges are set and centers are just slightly wobbly.
- Cool at room temperature for 1 hour. Cover and refrigerate for at least 4 hours or overnight.
- Run a knife around the edges to loosen. Place a platter over the tin and quickly invert to release. Serve chilled.

Ensure all dairy and eggs are at room temperature for a smooth, lump-free filling. Do not overmix the batter once eggs are added. Chilling is essential for the cheesecakes to set and release cleanly.
