Ingredients
  

Waffle Batter
  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp kosher salt
  • 1.75 cups milk or buttermilk room temperature
  • 0.33 cup unsalted butter melted and cooled
  • 2 eggs large, room temperature
  • 2 tsp vanilla extract
Topping
  • 1 cup thick caramel sauce or dulce de leche, warmed
  • 1 pinch flaky sea salt optional, for garnish

Equipment

  • Mini waffle maker or standard waffle maker
  • Mixing bowls

Method
 

  1. Preheat your mini waffle maker. If using an oven to keep them warm, preheat it to 200°F (90°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; small lumps are fine. Let batter rest for 5-10 minutes.
  5. Pour 1-2 tablespoons of batter onto the hot waffle iron and cook for 3-5 minutes until golden brown and crispy.
  6. Transfer cooked waffle bites to a wire rack in the warm oven. Repeat until all batter is used.
  7. Warm the caramel sauce slightly so it is easy to pour.
  8. Stack the mini waffle bites on a plate, generously drizzle with warm caramel sauce, top with a pinch of flaky salt if desired, and serve immediately.

Notes

To freeze, let waffle bites cool completely, flash freeze on a baking sheet, then store in an airtight bag. Reheat directly from frozen in a toaster.
