- Preheat your mini waffle maker. If using an oven to keep them warm, preheat it to 200°F (90°C).
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; small lumps are fine. Let batter rest for 5-10 minutes.
- Pour 1-2 tablespoons of batter onto the hot waffle iron and cook for 3-5 minutes until golden brown and crispy.
- Transfer cooked waffle bites to a wire rack in the warm oven. Repeat until all batter is used.
- Warm the caramel sauce slightly so it is easy to pour.
- Stack the mini waffle bites on a plate, generously drizzle with warm caramel sauce, top with a pinch of flaky salt if desired, and serve immediately.
Notes
To freeze, let waffle bites cool completely, flash freeze on a baking sheet, then store in an airtight bag. Reheat directly from frozen in a toaster.
