Ingredients

Waffle Cookie Batter
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 2 eggs large, room temperature
  • 1.5 tsp vanilla extract
  • 2 tbsp milk whole milk preferred
Garnish
  • 2 tbsp powdered sugar for dusting

Equipment

  • Mini waffle maker or standard waffle iron
  • Mixing bowls
  • Wire cooling rack
  • Hand mixer

Method

  1. Preheat your mini waffle maker. Lightly grease if necessary.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and sugar using a hand mixer until light and fluffy (about 2 minutes).
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. Gradually mix in the dry ingredients, alternating with the milk, until just combined into a thick dough.
  6. Drop a small scoop (about 1 tablespoon) of batter into the center of the preheated waffle maker. Close the lid gently.
  7. Cook for 2-4 minutes until the cookie is deep golden brown and crisp.
  8. Remove carefully and immediately place on a wire rack to cool and harden.
  9. Once completely cool, dust lightly with powdered sugar before serving.

Notes

Ensure you let the cookies cool on a wire rack; resting them on a flat plate will cause them to become soggy from trapped steam. Store in an airtight container for up to 5 days.
