Method
- Prepare the pre-cooked shrimp by ensuring they are thawed, tails are removed, and patting them dry. Roughly chop the shrimp into 2-3 pieces each if large.
- In a large mixing bowl, combine the chopped shrimp, diced avocados, diced tomatoes, diced red onion, chopped cilantro, and diced jalapeño.
- In a small bowl, whisk together the fresh lime juice, orange juice, salt, black pepper, dried oregano, and crushed red pepper flakes.
- Pour the citrus marinade over the shrimp and vegetable mixture. Toss gently to combine all ingredients and ensure everything is evenly coated.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld. *Optional: For deeper flavor, marinate for 1-2 hours.*
- Taste and adjust salt, pepper, or lime juice as needed. Serve chilled with a lime wedge garnish.
Notes
For a traditional cured ceviche, use raw shrimp and extend the marination time to 1-2 hours in the citrus juice until they turn opaque. For faster results, this recipe uses pre-cooked shrimp. Serve with tortilla chips, crackers, or on tostadas.
