Melted Brie and Fig Jam Croissant Sandwich

An incredibly indulgent and easy gourmet breakfast sandwich featuring a flaky, buttery croissant stuffed with thick slices of melted Brie cheese and sweet, sticky fig jam.

Ingredients
  

Main Ingredients
  • 2 large all-butter croissants bakery quality, sliced in half
  • 6 oz Brie cheese chilled and sliced 1/4-inch thick
  • 4 tbsp fig jam or fig preserves
  • 1 tbsp unsalted butter softened
Optional Garnishes
  • 1 pinch flaky sea salt for finishing
  • 1 sprig fresh thyme leaves for garnish

Equipment

  • Baking sheet
  • Parchment paper
  • Serrated Bread Knife
  • Pastry brush

Method
 

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Carefully slice the croissants in half horizontally using a serrated knife.
  3. Spread about 2 tablespoons of fig jam evenly over the bottom half of each croissant.
  4. Layer the thick slices of cold Brie cheese evenly on top of the fig jam.
  5. Place the top half of the croissant onto the cheese to close the sandwich.
  6. Lightly brush the top crust of each croissant with the softened butter to help it crisp.
  7. Place the sandwiches on the baking sheet and bake for 8 to 10 minutes, until the cheese is oozing and the croissant is deeply golden and toasted.
  8. Remove from the oven, sprinkle with flaky sea salt and fresh thyme if desired, and serve immediately.

Notes

Chilling the Brie for 15 minutes before assembling makes it much easier to slice evenly. Day-old croissants actually work best as they are slightly sturdier.
