Mediterranean Cucumber Feta Bites

Ingredients
  

Cucumber Base
  • 2 large English cucumbers or 4-5 Persian cucumbers
  • 1 tsp sea salt for seasoning
Herbed Feta
  • 8 oz block feta cheese cut into cubes
  • 0.25 cup fresh parsley finely chopped
  • 2 tbsp fresh dill finely chopped
  • 1 tbsp fresh oregano finely chopped
  • 1 tsp fresh mint finely chopped
  • 0.5 tsp red pepper flakes
  • 0.25 cup extra virgin olive oil
  • 2 garlic cloves minced
  • 1 lemon zested
Assembly
  • 24 kalamata olives pitted
  • 2 tbsp extra virgin olive oil for drizzling
  • fresh parsley sprigs for garnish
  • 24 bamboo picks or small skewers
  • cracked black pepper to taste

Method
 

  1. Wash cucumbers thoroughly and cut into rounds approximately 1/2 inch thick. Arrange on serving platter and lightly sprinkle with sea salt.
  2. In a shallow bowl, combine chopped parsley, dill, oregano, mint, and red pepper flakes. Mix well and set aside.
  3. Cut feta cheese into cubes about 3/4 inch on each side. Pat dry with paper towels to remove excess moisture.
  4. In a medium bowl, whisk together olive oil, minced garlic, and lemon zest. Add feta cubes and toss to coat. Marinate for at least 15 minutes.
  5. Remove feta cubes from marinade (reserve oil) and roll each cube in the herb mixture, pressing gently to adhere.
  6. Place one herbed feta cube on each cucumber round, pressing down slightly. Top each with one kalamata olive.
  7. Insert a bamboo pick through the olive, feta, and cucumber to secure. Drizzle with reserved garlic-lemon oil.
  8. Garnish with cracked black pepper and fresh parsley sprigs. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

For best flavor, let bites come to room temperature 10-15 minutes before serving. Prepare components separately up to 24 hours ahead and assemble just before serving for freshest results.
