Mediterranean Beef and Zucchini Rice Bowls

Ingredients
  

Rice Base
  • 1 cup white rice jasmine or basmati
  • 2 cups water
  • 0.5 tsp salt
Beef & Veggies
  • 1 lb ground beef lean
  • 2 zucchini sliced into rounds
  • 2 yellow squash sliced into rounds
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp cumin
Garnish
  • 0.5 cup feta cheese crumbled
  • 0.25 cup fresh dill chopped
  • 1 lemon cut into wedges

Method
 

  1. Rinse rice and cook in boiling salted water for 15-18 minutes until fluffy.
  2. Brown the ground beef in a large skillet over medium-high heat. Remove and set aside.
  3. In the same pan, sauté onion until translucent, then add garlic and spices.
  4. Add sliced zucchini and yellow squash to the pan. Cook on high heat to sear, about 5-6 minutes.
  5. Return beef to the pan and toss to combine. Season with salt and pepper.
  6. Serve mixture over rice. Top generously with crumbled feta, fresh dill, and a squeeze of lemon.

Notes

Don't overcrowd the pan when cooking the zucchini to ensure it browns instead of steams.
