Ingredients
  

Yogurt Layers
  • 2 cups Greek yogurt plain or vanilla, divided
  • 1.5 tsp matcha powder culinary grade
  • 2 tbsp honey or maple syrup divided
Fruit & Toppings
  • 1.5 cups fresh strawberries sliced and diced
  • 2 tbsp unsweetened shredded coconut

Equipment

  • 2 clear stemless glasses
  • Small Mixing Bowls
  • Whisk

Method
 

  1. Slice half the strawberries thinly and dice the rest.
  2. In a bowl, whisk 1 cup of Greek yogurt with the matcha powder and 1 tablespoon of honey until smooth and evenly green.
  3. If using plain yogurt, mix the remaining 1 cup with the other tablespoon of honey in a separate bowl.
  4. Spoon the green matcha yogurt into the bottom of two clear glasses.
  5. Arrange the sliced strawberries against the inside of the glass on top of the green layer, and fill the center with some diced strawberries.
  6. Spoon the white yogurt over the strawberries.
  7. Top with remaining diced strawberries and a generous sprinkle of shredded coconut. Serve immediately or chill.

Notes

To make this vegan, simply swap the Greek yogurt for a thick coconut or almond milk yogurt, and use maple syrup instead of honey. Best enjoyed within 24 hours of making.
