Ingredients
  

Shortbread Dough (Pale)
  • 1 cup (226g) unsalted butter softened
  • 0.5 cup (60g) powdered sugar sifted
  • 1 tsp vanilla extract
  • 2 cups (240g) all-purpose flour sifted
  • 0.25 tsp sea salt
Matcha Dough (Green)
  • half of pale dough Base Dough from above
  • 2 tbsp matcha powder premium culinary grade
  • 2 tsp warm water for paste
Decoration
  • as needed edible eyes or black royal icing

Method
 

  1. Prep: Sift flour, salt, and powdered sugar. Soften butter.
  2. In a large bowl, cream softened butter and sifted powdered sugar until fluffy. Mix in vanilla.
  3. Gradually mix in sifted flour and salt until a soft dough forms. Do not overmix.
  4. Divide dough into two halves. In a small bowl, whisk matcha powder with warm water to a smooth paste. Mix this paste evenly into one half of the dough.
  5. Wrap both doughs in plastic and chill for 30 minutes.
  6. Roll out pale dough to 1/4 inch thickness. Cut out bodies using a round cutter. Roll out green dough to the same thickness. Cut out shells, flippers (4 per turtle), and heads.
  7. Texturing: Press a waffle-pattern weaver or texture mat gently onto the green shell pieces.
  8. Assembly: Place a pale body. Top with a green textured shell. Attach flippers and head. Press eyes gently onto the head piece.
  9. Place assembled cookies on lined baking sheets and chill for at least 15-20 minutes before baking. Preheat oven to 325°F (165°C).
  10. Bake for 10-12 minutes, until just set and the pale parts are no longer glossy, but not browned. Cool on sheet for 5 mins, then transfer to a wire rack.

Notes

Premium matcha powder is key for the best flavor and color. Edible eyes make this step incredibly easy. Do not skip the final chill before baking; it prevents the cookies from losing their shape.
