Mango Habanero Honey Garlic Sauce

Ingredients
  

Main Sauce
  • 2 cups ripe mango diced, fresh or frozen (thawed)
  • 1-4 habanero peppers stemmed (seeds removed for less heat)
  • 4-5 cloves garlic rough chopped
  • 0.5 cup honey
  • 0.25 cup rice vinegar or fresh lime juice
  • 0.25 cup water
  • 0.5 cup fresh cilantro lightly packed
  • 0.5 tsp salt

Equipment

  • Heavy-bottom Saucepan

  • Gloves (for habaneros)

Method
 

  1. IMPORTANT: Wear gloves when handling habaneros to avoid skin irritation.
  2. Add all ingredients (mango, habaneros, garlic, honey, rice vinegar, water, cilantro, and salt) to a blender or the cup of an immersion blender.
  3. Blend on high speed until the sauce reaches your desired consistency (smooth or slightly pulpy).
  4. Pour the blended mixture into a medium, heavy-bottomed saucepan.
  5. Bring the sauce to a gentle simmer over medium heat, stirring frequently to prevent scorching.
  6. Let the sauce simmer for 10-15 minutes. This will cook the raw garlic, meld the flavors, and thicken the sauce to a thick, gooey, viscous consistency.
  7. Taste the sauce (let it cool first!) and adjust seasonings if necessary (more salt, lime juice, etc.).
  8. Remove from heat and let the sauce cool completely. It will thicken further as it cools.
  9. Store in an airtight container or glass jar in the refrigerator for up to 2 weeks.

Notes

Heat Control: Start with 1 habanero for a mild-medium kick. For a very hot sauce, use 3-4. Remember to remove seeds and ribs for less heat. Always wear gloves!
