Ingredients
  

Blue Tea Base
  • 2 tbsp dried butterfly pea flowers or 2 tea bags
  • 0.5 cup boiling water
  • 0.25 cup simple syrup
Lemonade Layer
  • 0.25 cup fresh lemon juice strained
  • 0.5 cup sparkling water chilled
Assembly & Garnish
  • 2 cups crushed ice essential for layering
  • 1 slice lemon wheel for garnish
  • 1 edible flower pansy or viola

Equipment

  • Tall Highball Glass
  • Measuring cups and spoons
  • Bar spoon
  • Citrus juicer

Method
 

  1. Steep the dried butterfly pea flowers in the boiling water for 5-7 minutes. Remove flowers and let the blue tea cool to room temperature.
  2. Mix the cooled blue tea with the simple syrup to create a dense base. Pour this into the bottom of your tall glass.
  3. Fill the glass completely to the top with crushed ice.
  4. In a separate small vessel, mix the fresh lemon juice with the chilled sparkling water.
  5. Hold a spoon upside down over the ice. Very slowly pour the lemon mixture over the back of the spoon to layer it on top of the blue base, watching it change to purple and pink.
  6. Garnish with a fresh lemon wheel and an edible flower. Serve with a straw and stir before drinking.

Notes

Using crushed ice is crucial for creating the beautiful separated layers. If you don't have simple syrup, you can make your own by dissolving equal parts sugar and hot water, then cooling.
