- Preheat oven to 425°F (220°C). Toss cubed potatoes with oil, chili powder, garlic powder, and salt.
- Roast potatoes on a baking sheet for 30-40 minutes, flipping halfway, until crispy and golden.
- Meanwhile, brown ground beef in a skillet over medium-high heat; drain fat.
- Stir in taco spices (chili powder, cumin, paprika, etc.) and beef broth; simmer 3-5 minutes.
- Divide crispy potatoes into bowls. Top with the hot beef mixture.
- Immediately sprinkle with cheddar cheese, then add corn, tomatoes, and red onion.
- Finish with a dollop of sour cream, cilantro, and serve with lime wedges.
Notes
For the best melt, shred your cheddar cheese from a block. You can substitute ground turkey for beef for a lighter option.
