- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3 minutes).
- Beat in eggs one at a time, followed by the vanilla extract.
- Gradually mix in the flour mixture on low speed until just combined.
- Fold in the rolled oats, chocolate chips, pecans, coconut, and cranberries by hand until evenly distributed.
- Scoop rounded tablespoons of dough onto baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until edges are golden brown but centers are still soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
To toast pecans: Bake on a sheet at 350°F for 5-7 minutes until fragrant. Watch closely so they don't burn.
