Ingredients
  

Main Components
  • 4 slices sourdough bread thick cut
  • 1 cup cooked chicken breast sliced
  • 4 oz cheddar cheese sliced or shredded
  • 3 tbsp butter softened
Avocado Smash
  • 1 avocado ripe
  • 2 tbsp red onion diced
  • 1 tbsp lime juice
  • 1 tbsp cilantro chopped

Equipment

  • Large Skillet or Griddle
  • Chef's knife
  • Small mixing bowl
  • Spatula

Method
 

  1. In a small bowl, mash the avocado with lime juice, diced red onion, cilantro, and a pinch of salt. Set aside.
  2. Butter one side of each slice of sourdough bread.
  3. On the unbuttered side of two slices, layer half the cheese, the sliced chicken, the avocado smash, and the remaining cheese.
  4. Top with the remaining bread slices, buttered side facing out.
  5. Heat a skillet over medium-low heat. Place sandwiches in the pan.
  6. Cook for 4-6 minutes per side, or until the bread is golden brown and cheese is fully melted.
  7. Let rest for 2 minutes before slicing in half to serve.

Notes

Using medium-low heat is crucial to melt the cheese before the bread burns. Cover the pan for the last minute if needed.
