Ingredients
  

Potato Base
  • 30 oz frozen shredded hash browns thawed and squeezed dry
  • 0.5 cup unsalted butter melted
  • 2 large eggs beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper
Toppings
  • 2 cups cheddar cheese shredded
  • 8 slices bacon cooked crispy and crumbled
  • 0.5 cup sour cream
  • 2 tbsp fresh chives chopped

  • Large mixing bowl
  • Clean kitchen towel (for drying potatoes)

Method
 

  1. Preheat oven to 400°F (200°C). Grease a 9x13 inch baking dish well with butter or cooking spray.
  2. Place thawed hash browns in a clean towel and squeeze out as much moisture as possible. This ensures crispiness.
  3. In a large bowl, mix the dried hash browns, melted butter, beaten eggs, garlic powder, onion powder, salt, and pepper.
  4. Press the potato mixture firmly and evenly into the prepared baking dish.
  5. Bake for 40-45 minutes until the edges are golden brown and the center is set.
  6. Remove from oven. Top evenly with shredded cheddar cheese and crumbled bacon.
  7. Bake for an additional 5-10 minutes until cheese is fully melted and bubbly.
  8. Let cool for 10-15 minutes to firm up before slicing into squares.
  9. Drizzle with sour cream and garnish with fresh chives before serving.

Notes

To make the sour cream easier to drizzle (as shown in the image), whisk it with 1 tablespoon of milk before using.
