Ingredients
  

Roasted Potatoes
  • 1.5 lbs potatoes cubed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
Beef Mixture
  • 1 lb ground beef lean
  • 1 small onion diced
  • 1 tbsp Worcestershire sauce
Toppings & Sauce
  • 1 cup cherry tomatoes chopped
  • 0.5 cucumber sliced
  • 0.5 red onion sliced
  • 0.5 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp mustard

Method
 

  1. Preheat oven to 400°F (200°C). Toss cubed potatoes with oil and spices.
  2. Spread potatoes on a baking sheet and roast for 25-30 minutes until crispy, flipping halfway.
  3. Whisk together mayonnaise, ketchup, mustard, and spices to create the sauce. Refrigerate.
  4. In a skillet over medium-high heat, cook ground beef with diced onion and garlic until browned and cooked through.
  5. Chop tomatoes, slice cucumbers, and slice red onions for the fresh toppings.
  6. Assemble bowls with a portion of potatoes, beef, and fresh vegetables.
  7. Drizzle generously with the prepared special sauce and garnish with parsley.

Notes

For extra crispiness, soak the cut potatoes in cold water for 30 minutes and pat dry before roasting.
