- Heat olive oil in a large pot over medium heat. Add onion and sauté for 5 minutes until soft.
- Add minced garlic, thyme, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Pour in broth and add the parmesan rind. Bring to a boil.
- Stir in the dry orzo and broccoli florets. Reduce heat to a simmer.
- Cook for 8-10 minutes, stirring occasionally, until orzo is al dente and broccoli is tender.
- Remove from heat. Discard parmesan rind.
- Stir in fresh lemon juice and grated parmesan cheese.
- Season generously with salt and pepper. Serve hot with extra cheese on top.
Notes
Orzo absorbs liquid quickly. If storing leftovers, you will need to add a splash of water or broth when reheating to return it to a soup consistency.
