Ingredients
  

For the Beef
  • 1 pound ground beef 80/20 blend recommended
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons brown sugar
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes optional
  • 2 green onions chopped
For the Vegetables
  • 8 ounces mushrooms sliced
  • 2 cups broccoli florets
  • 1 large zucchini sliced into rounds
  • 1 red bell pepper sliced
  • 1 tablespoon vegetable oil
  • salt and pepper to taste
For the Bowl
  • 3 cups cooked white rice
  • sesame seeds for garnish
  • green onions for garnish
  • sriracha or gochujang optional

Equipment

  • Large skillet or wok
  • Rice cooker or pot
  • Mixing bowls
  • Knife and cutting board

Method
 

  1. Cook rice according to package directions and keep warm.
  2. Prepare all vegetables by washing and cutting them into bite-sized pieces.
  3. In a small bowl, mix together soy sauce, sesame oil, brown sugar, garlic, ginger, black pepper, and red pepper flakes.
  4. Heat a large skillet over medium-high heat. Add ground beef and cook for 5-7 minutes, breaking into small crumbles until browned.
  5. Drain excess fat if necessary. Pour sauce mixture over beef, stir well, and cook for 2-3 minutes until caramelized. Transfer to a bowl.
  6. In the same skillet, add vegetable oil and mushrooms. Cook 4-5 minutes until golden. Season with salt and pepper. Remove and set aside.
  7. Add broccoli with a splash of water, cover and steam for 3-4 minutes until tender-crisp. Remove and set aside.
  8. Sauté zucchini and bell pepper for 3-4 minutes until tender. Season with salt and pepper.
  9. Divide rice among four bowls. Arrange beef and vegetables in sections on top of rice.
  10. Garnish with sesame seeds and green onions. Add sriracha or gochujang if desired. Serve immediately.

Notes

This bowl is perfect for meal prep - store components separately and reheat when ready to eat. Customize with your favorite vegetables or protein alternatives. For extra flavor, add a fried egg on top or serve with kimchi.
