Ingredients
  

Base
  • 1 lb pizza dough store-bought or homemade
  • 1 tbsp olive oil extra virgin
  • 1 tbsp cornmeal for dusting
Toppings
  • 0.5 lb Italian sausage casings removed
  • 1 cup mozzarella cheese shredded
  • 4 oz goat cheese crumbled
Finish
  • 2 tbsp hot honey plus more for serving
  • 1 tbsp fresh thyme leaves only
  • 0.5 tsp red pepper flakes optional

  • Pizza Peel or Parchment Paper
  • Skillet
  • Pizza Cutter

Method
 

  1. Place a pizza stone in the oven and preheat to 500°F (260°C) for at least 45 minutes.
  2. In a skillet over medium-high heat, cook the Italian sausage, breaking it into crumbles, until browned and cooked through. Drain fat.
  3. Stretch the pizza dough into a 12-inch circle on a floured surface. Transfer to a peel dusted with cornmeal.
  4. Brush the crust edge with olive oil. Sprinkle mozzarella over the base.
  5. Top evenly with the cooked sausage and dollops of goat cheese.
  6. Slide onto the hot stone and bake for 10-12 minutes until crust is charred and cheese is bubbly.
  7. Remove from oven. Immediately drizzle with hot honey and sprinkle with fresh thyme.
  8. Slice and serve hot.

Notes

If you don't have a pizza stone, use a heavy baking sheet flipped upside down. Preheat it with the oven for best results.
