Ingredients
  

Crispy Wings
  • 3 lbs chicken wings flats and drumettes
  • 1 tbsp baking powder aluminum-free
  • 1 tsp salt
Hot Honey Peach Glaze
  • 1 cup honey
  • 0.5 cup peach puree or 1/3 cup jam
  • 0.25 cup hot sauce cayenne based
  • 1 tbsp apple cider vinegar
  • 0.5 tsp cayenne pepper adjust to heat level
  • 2 tbsp unsalted butter cold, cut into cubes

  • Wire Rack and Baking Sheet
  • Small saucepan
  • Large mixing bowl
  • Blender or Food Processor (for puree)

Method
 

  1. Pat wings dry. Toss with baking powder, salt, and seasonings. Arrange on a rack over a baking sheet.
  2. Bake at 425°F (220°C) for 35-40 minutes, flipping once, until skin is very crispy.
  3. Combine honey, peach puree, hot sauce, vinegar, and cayenne in a saucepan. Simmer gently for 10-15 minutes until visibly thickened and viscous.
  4. Remove glaze from heat. Whisk in cold butter cubes until glossy and thick.
  5. Transfer hot wings to a bowl. Pour 3/4 of the warm glaze over them and toss until completely coated.
  6. Serve immediately, drizzled with remaining sauce and garnished with sesame seeds and green onions.

Notes

Do not glaze the wings until you are ready to serve to maintain crispiness. Use aluminum-free baking powder for best results. The glaze will thicken significantly as it cools.
