- Pat the chicken cutlets dry. In a small bowl, mix salt, pepper, and garlic powder. Season the chicken on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook, undisturbed, for 4-5 minutes per side, until golden-brown and cooked through (165°F).
- Remove the chicken from the skillet and set aside on a plate.
- Lower the heat to medium-low. Add the butter to the same skillet. Once melted, add the minced garlic and cook for 30 seconds until fragrant.
- Stir in the honey, hot sauce, and apple cider vinegar. Whisk to combine, scraping up any browned bits. Let the sauce bubble and simmer for 2-3 minutes to thicken.
- Return the chicken (and any plate juices) to the skillet. Spoon the thick, gooey sauce over the chicken pieces, turning to coat.
- Sprinkle the crumbled feta cheese over the chicken and sauce. Let it cook for 1-2 minutes more to warm the feta.
- Remove from heat, garnish with fresh parsley, and serve immediately.
Notes
For best results, use thinly sliced chicken cutlets so they cook quickly and evenly. Adjust the amount of hot sauce to control the spice level. Using a block of feta in brine will provide the best flavor.
