Ingredients
  

Pastry Base
  • 1 sheet puff pastry thawed if frozen
  • 1 egg beaten with 1 tsp water for wash
Toppings
  • 6 oz goat cheese log sliced into 6 rounds
  • 0.25 cup walnuts chopped and toasted
  • 3 tbsp honey for drizzling
  • 6 sprigs fresh thyme
  • 1 pinch flaky sea salt

  • Round cookie cutter

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry slightly on a floured surface. Use a cookie cutter to cut 6 round circles.
  3. Score a smaller circle inside each pastry round (don't cut through) to create a border, and prick the center with a fork.
  4. Brush the outer border of the pastry with the egg wash.
  5. Place a slice of goat cheese in the center of each pastry round.
  6. Bake for 15-20 minutes until the pastry is puffed and golden brown.
  7. Remove from oven. Immediately top with chopped walnuts, fresh thyme leaves, and a generous drizzle of honey.
  8. Sprinkle with flaky sea salt and serve warm.

Notes

Ensure the puff pastry is cold before putting it in the oven for the best rise. You can substitute pecans for walnuts if desired.
