Ingredients
  

Dry Ingredients
  • 1.5 cups rolled oats old fashioned
  • 1 cup pecans chopped and toasted
  • 0.5 tsp cinnamon
  • 0.25 tsp sea salt
Wet Binder
  • 0.5 cup almond butter or peanut butter
  • 0.33 cup honey
  • 1 tsp vanilla extract
Serving
  • 2 tbsp maple syrup for drizzling

Method
 

  1. Preheat oven to 350°F (175°C). Spread oats and chopped pecans on a baking sheet.
  2. Toast in the oven for 5-8 minutes until fragrant. Let cool completely.
  3. In a large bowl, whisk together almond butter, honey, vanilla, salt, and cinnamon.
  4. Add the cooled oats and pecans to the wet mixture. Fold until well combined.
  5. Cover and refrigerate for 30 minutes to firm up the mixture.
  6. Scoop 1 tablespoon of mixture and roll tightly into a ball. Repeat with remaining mixture.
  7. Serve on a plate with a drizzle of maple syrup or honey.
  8. Store leftovers in an airtight container in the refrigerator.

Notes

Toasting the oats and nuts adds a depth of flavor that mimics baked cookies. Ensure they are cool before mixing to keep the texture firm.
