- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
- Prepare the carrots by washing, peeling, and cutting them into uniform pieces. If using baby carrots, leave them whole. For regular carrots, cut them into sticks about 3-4 inches long and 1/2 inch thick.
- In a large mixing bowl, toss the carrots with olive oil, salt, pepper, garlic powder, and cinnamon if using. Make sure every carrot piece is evenly coated with the oil and seasonings.
- Arrange the carrots in a single layer on the prepared baking sheet, ensuring they're not touching or overlapping. This allows proper air circulation for even roasting.
- Roast the carrots for 15 minutes, then remove from the oven and flip them over using tongs or a spatula. This ensures even browning on all sides.
- While the carrots are roasting, prepare the honey glaze. In a small saucepan over low heat, melt the butter with honey, lemon juice, and thyme. Stir until well combined and slightly reduced, about 2-3 minutes.
- After the carrots have roasted for a total of 20-25 minutes and are fork-tender with golden edges, remove them from the oven. Drizzle the honey glaze over the carrots and toss gently to coat.
- Return the glazed carrots to the oven for an additional 5-7 minutes, allowing the glaze to caramelize and become sticky. Watch carefully to prevent burning.
- Remove from the oven, transfer to a serving platter, and garnish with fresh chopped parsley. Serve immediately while hot and enjoy the perfect balance of sweet and savory flavors.
Notes
For best results, cut carrots into uniform sizes for even cooking. The glaze can be customized with balsamic vinegar, maple syrup, or different herbs. Store leftovers in an airtight container in the refrigerator for up to 4 days.
