Method
- Preheat oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish.
- Pat chicken thighs dry with paper towels and arrange them in the baking dish.
- In a small bowl, whisk together honey, soy sauce, garlic, olive oil, vinegar, and paprika.
- Pour the sauce over the chicken, turning pieces to coat thoroughly.
- Bake for 20 minutes. Remove from oven and baste the chicken with the pan sauce.
- Bake for another 15-20 minutes until chicken is cooked through and glaze is sticky.
- Remove from oven, sprinkle immediately with crumbled feta cheese and chopped parsley.
- Serve warm with rice or roasted vegetables.
Notes
For a thicker sauce, remove cooked chicken and simmer the pan juices on the stove for 3-5 minutes before serving.
