Ingredients
  

Chicken & Marinade
  • 2 lbs chicken thighs boneless, skinless
  • 0.5 cup honey
  • 0.33 cup soy sauce low sodium
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 0.5 tsp paprika
Garnish
  • 0.33 cup feta cheese crumbled
  • 2 tbsp fresh parsley chopped

  • Small mixing bowl

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish.
  2. Pat chicken thighs dry with paper towels and arrange them in the baking dish.
  3. In a small bowl, whisk together honey, soy sauce, garlic, olive oil, vinegar, and paprika.
  4. Pour the sauce over the chicken, turning pieces to coat thoroughly.
  5. Bake for 20 minutes. Remove from oven and baste the chicken with the pan sauce.
  6. Bake for another 15-20 minutes until chicken is cooked through and glaze is sticky.
  7. Remove from oven, sprinkle immediately with crumbled feta cheese and chopped parsley.
  8. Serve warm with rice or roasted vegetables.

Notes

For a thicker sauce, remove cooked chicken and simmer the pan juices on the stove for 3-5 minutes before serving.
