Ingredients
  

Meatballs
  • 1 lb ground chicken
  • 0.5 cup panko breadcrumbs
  • 0.25 cup parmesan cheese grated
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil for frying
Honey Garlic Sauce
  • 4 tbsp unsalted butter
  • 0.33 cup honey
  • 4 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tbsp parsley chopped, for garnish

Method
 

  1. In a large bowl, mix ground chicken, breadcrumbs, parmesan, egg, garlic powder, and onion powder until combined.
  2. Shape the mixture into 12-15 meatballs. If the mixture is sticky, oil your hands lightly.
  3. Heat olive oil in a large skillet over medium-high heat. Add meatballs and cook for 5-6 minutes, turning occasionally, until browned on all sides.
  4. Reduce heat, cover, and cook for 2-3 more minutes until cooked through. Remove meatballs from pan.
  5. In the same pan, melt butter. Add minced garlic and sauté for 1 minute.
  6. Stir in honey, soy sauce, and lemon juice. Simmer for 2 minutes until sauce slightly thickens.
  7. Add meatballs back to the pan and toss to coat in the glaze. Garnish with parsley.

Notes

Serve immediately over rice or mashed potatoes. Store leftovers in the fridge for up to 4 days.
