- Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- Pat chicken breasts dry with paper towels and season generously with salt, pepper, and smoked paprika.
- Place chicken in the prepared baking dish in a single layer.
- In a small bowl, whisk together melted butter, honey, minced garlic, soy sauce, and apple cider vinegar until smooth.
- Pour the sauce evenly over the chicken breasts, ensuring they are well coated.
- Bake for 20-25 minutes, basting with the pan sauce halfway through, until internal temperature reaches 165°F (74°C).
- Optional: Broil for 2-3 minutes at the end to caramelize the tops. Watch carefully to prevent burning.
- Remove from oven and immediately top with crumbled feta cheese and parsley. Let rest for 5 minutes before serving.
