- Make Brownie Dough: Melt 1/2 cup butter. Whisk in 1 cup granulated sugar, then 2 eggs and 1 tsp vanilla. Whisk flour, cocoa, baking powder, salt separately. Combine wet and dry. Fold in 1/2 cup chocolate chips (optional). Set aside.
- Make Peanut Butter Dough: Cream 1/2 cup softened butter, brown sugar, and 1/4 cup granulated sugar. Beat in 1/2 cup peanut butter, then 1 egg and 1 tsp vanilla. Whisk flour, baking soda, salt separately. Combine wet and dry.
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment.
- Form Swirl Balls: Take 1 tbsp of brownie dough and 1 tbsp of peanut butter dough. Gently press them side-by-side, then twist a couple of times to create a swirl. Form into a 1.5-inch ball.
- Place balls 2 inches apart on baking sheets.
- Bake for 10-12 minutes. Edges should be set, centers will look soft, puffy, and visibly gooey/under-baked.
- Cool on baking sheets for 10-15 minutes. This is critical for the gooey centers to set enough.
- Transfer to wire rack to cool completely. Enjoy the gooeyness!
Notes
Do not overbake! The key to gooey centers is pulling them from the oven when they still look slightly underdone in the middle. Cooling on the baking sheet is crucial.
