Method
- In a large bowl, whisk together the flour, baking powder, and fine sea salt.
- Add the Greek yogurt, olive oil, and half the water. Mix until a dough forms, adding remaining water only if too dry.
- Turn dough onto a floured surface and knead for 3-5 minutes until smooth. Cover and let rest for 15 minutes.
- While dough rests, melt the butter and stir in the minced garlic. Keep chopped herbs nearby.
- Divide the rested dough into 6 equal pieces and roll each into a 1/4-inch thick circle or oval.
- Heat a dry cast-iron skillet over medium-high heat until very hot.
- Cook flatbreads one at a time for 60-90 seconds per side until large bubbles form and dark blistered spots appear.
- Remove from heat, immediately brush with garlic butter, and sprinkle with fresh chopped herbs.
- Stack to keep warm and serve immediately.
Notes
Store leftovers in an airtight bag at room temperature for up to 2 days. Reheat briefly in a warm skillet or toaster to restore softness.
