Homemade Creamy Strawberry Soft Serve

A refreshing, vibrant pink soft serve made in minutes using frozen strawberries and yogurt. No ice cream machine required for this healthy summer treat.

Ingredients
  

Soft Serve Base
  • 4 cups frozen strawberries whole or sliced
  • 0.5 cup Greek yogurt full fat vanilla or plain
  • 3 tbsp honey or agave syrup adjust to taste
  • 1 tbsp fresh lemon juice
  • 1 pinch salt
Garnish
  • 4 fresh strawberries whole

Equipment

  • High-speed blender or Food Processor
  • Piping bag
  • Star piping tip (Wilton 1M)
  • Spatula

Method
 

  1. Remove frozen strawberries from the freezer and let them sit at room temperature for 5 minutes to slightly soften.
  2. Add the Greek yogurt, honey, lemon juice, and salt into the basin of a food processor or high-speed blender.
  3. Add the frozen strawberries on top of the liquid ingredients.
  4. Pulse the mixture 5-8 times to break up the large fruit chunks.
  5. Process on high speed for 1-2 minutes. You may need to stop and scrape down the sides or use a tamper to push the fruit into the blades.
  6. Stop processing immediately once the mixture becomes creamy and smooth to prevent melting.
  7. Transfer the mixture into a piping bag fitted with a large star tip.
  8. Pipe swirls into chilled serving cups and top with a fresh strawberry. Serve immediately.

Notes

If the texture is too soft to pipe, place the blender canister in the freezer for 15-20 minutes to firm up before piping.
