Ingredients

Tart Components
  • 1 sheet puff pastry thawed
  • 8 oz Brie cheese cold, sliced
  • 0.5 cup whole berry cranberry sauce
  • 5 slices bacon cooked crispy and crumbled
Toppings & Wash
  • 1 large egg for egg wash
  • 1 tbsp water for egg wash
  • 2 tsp fresh thyme leaves

Equipment

  • Large baking sheet
  • Parchment paper
  • Sharp knife or pizza cutter
  • Pastry brush

Method

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unroll thawed puff pastry onto the baking sheet. Score a 1-inch border around the edge with a knife and prick the center area with a fork.
  3. Arrange sliced Brie in the center, top with dollops of cranberry sauce and crumbled crispy bacon.
  4. Whisk egg and water together and brush onto the pastry border.
  5. Bake for 20-25 minutes until the pastry is puffed and golden brown and the cheese is bubbly.
  6. Let cool for 5 minutes, garnish with fresh thyme, slice into squares, and serve warm.

Notes

Ensure puff pastry is thawed but still cold for best puff. You can leave the rind on the Brie or remove it based on preference. Drizzle with honey before serving for extra sweetness.
