Ingredients
  

Crostini Base
  • 1 loaf French baguette sliced into rounds
  • 0.25 cup olive oil for brushing
  • 1 clove garlic peeled
Whipped Ricotta
  • 1.5 cups ricotta cheese whole milk
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 0.5 tsp salt
Toppings
  • 1 pint cherry tomatoes halved
  • 1 bunch fresh basil leaves only
  • 0.33 cup balsamic glaze

Equipment

  • Baking sheet
  • Food processor or mixer
  • Large round serving board
  • Bread knife

Method
 

  1. Preheat oven to 400°F (200°C). Slice baguette into rounds and brush with olive oil.
  2. Bake slices for 8-10 minutes until golden. Rub hot bread with raw garlic clove. Let cool.
  3. Whip ricotta, olive oil, lemon zest, and salt in a food processor until smooth and fluffy.
  4. Spread whipped ricotta onto each cooled crostini.
  5. Arrange the crostini in a circle on a large board to resemble a wreath.
  6. Top each piece with halved cherry tomatoes and tuck in fresh basil leaves.
  7. Drizzle balsamic glaze over the entire wreath just before serving.

Notes

Assemble the wreath no more than 1 hour before serving to keep the bread crisp. You can prepare the toasted bread and whipped cheese a day in advance.
