Ingredients
  

Waffle Batter
  • 1 scoop vanilla whey protein powder approx 30g
  • 0.5 cup oat flour gluten-free if needed
  • 1 egg large
  • 0.25 cup Greek yogurt plain, non-fat
  • 0.25 cup almond milk unsweetened
  • 1 tsp baking powder
Toppings
  • 0.5 cup Greek yogurt mixed with sweetener for 'cream'
  • 1 cup strawberries fresh, sliced
  • 2 tbsp sugar-free syrup or maple syrup

Method
 

  1. Preheat your waffle iron. Mix oat flour, protein powder, baking powder, and cinnamon in a bowl.
  2. In a separate bowl, whisk the egg, Greek yogurt (for batter), almond milk, and vanilla extract.
  3. Pour wet ingredients into dry and mix until just combined. Let batter rest for 3 minutes.
  4. Grease waffle iron. Pour batter in and cook for 3-5 minutes until crispy.
  5. While waffles cook, mix the remaining Greek yogurt with sweetener to make the 'cream'.
  6. Stack waffles with layers of yogurt cream. Top with strawberries and syrup.

Notes

Do not overmix the batter or the waffles will be tough. If using casein protein, you may need more liquid.
