- Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, place on a baking sheet, and roast for 5-7 minutes until slightly soft. Let cool completely.
- In a bowl, mix softened cream cheese and goat cheese until smooth.
- Fold in the chopped dill, chives, minced garlic, salt, and pepper. Chill for 30 minutes to let flavors meld.
- Lay crackers flat on a serving platter.
- Spread or pipe a generous dollop of the herbed cheese mixture onto the center of each cracker.
- Gently press a cooled, roasted cherry tomato into the top of the cheese on each cracker.
- Using a squeeze bottle or toothpick, apply 3-4 tiny dots of balsamic glaze onto the top of each tomato.
- Garnish each canapé by tucking a tiny sprig of fresh dill beside the tomato. Serve immediately.
Notes
The cheese mixture can be made up to 3 days in advance and stored in the refrigerator. Assemble the crackers just before serving to prevent them from getting soggy.
