Herbed Cheese and Tomato Canapés

Ingredients
  

Base and Topping
  • 24 buttery round crackers scalloped edges preferred
  • 24 cherry tomatoes small, on the vine if possible
  • 1 tbsp extra virgin olive oil
Herbed Cheese Spread
  • 8 oz cream cheese softened
  • 4 oz goat cheese softened
  • 2 tbsp fresh dill finely chopped, plus extra for garnish
  • 1 tbsp fresh chives minced
  • 1 clove garlic minced into a paste
  • 0.25 tsp black pepper freshly ground
  • 0.25 tsp kosher salt
Garnish
  • 1 tbsp balsamic glaze for dotting

Method
 

  1. Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, place on a baking sheet, and roast for 5-7 minutes until slightly soft. Let cool completely.
  2. In a bowl, mix softened cream cheese and goat cheese until smooth.
  3. Fold in the chopped dill, chives, minced garlic, salt, and pepper. Chill for 30 minutes to let flavors meld.
  4. Lay crackers flat on a serving platter.
  5. Spread or pipe a generous dollop of the herbed cheese mixture onto the center of each cracker.
  6. Gently press a cooled, roasted cherry tomato into the top of the cheese on each cracker.
  7. Using a squeeze bottle or toothpick, apply 3-4 tiny dots of balsamic glaze onto the top of each tomato.
  8. Garnish each canapé by tucking a tiny sprig of fresh dill beside the tomato. Serve immediately.

Notes

The cheese mixture can be made up to 3 days in advance and stored in the refrigerator. Assemble the crackers just before serving to prevent them from getting soggy.
