Ingredients
  

Vegetables
  • 3 medium zucchini cut into 1/2-inch thick rounds
Herb Marinade
  • 0.25 cup extra virgin olive oil
  • 3 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp coarse sea salt
  • 0.5 tsp black pepper freshly cracked

Method
 

  1. If using wooden skewers, soak them in water for at least 30 minutes prior to grilling.
  2. In a large bowl, whisk together the olive oil, minced garlic, parsley, rosemary, thyme, lemon juice, salt, and pepper.
  3. Add the thick zucchini rounds to the bowl and toss until evenly coated. Let marinate for 15 minutes at room temperature.
  4. Preheat your grill to medium-high heat (400°F - 450°F). Clean and lightly oil the grates.
  5. Thread the marinated zucchini rounds onto the skewers, piercing them through the center so they lie flat.
  6. Grill the skewers for 3-4 minutes per side until deep grill marks appear and the zucchini is tender but still has a bite.
  7. Remove from grill, drizzle with any remaining marinade, sprinkle with extra coarse salt, and serve immediately.

Notes

Do not slice the zucchini too thin or leave it in the marinade longer than 20 minutes, otherwise it will become mushy on the grill.
