- Toast pecans in a dry skillet over medium heat for 3-5 minutes until fragrant. Cool completely.
- Prepare vinaigrette: In a jar, combine balsamic vinegar, honey, Dijon mustard, salt, and pepper. Shake well.
- While whisking continuously, slowly drizzle in the olive oil until the dressing emulsifies and becomes thick and glossy (viscous).
- In a large bowl, combine the mixed greens. Add about half of the vinaigrette and toss gently to coat.
- Add the mandarin segments, cooled pecans, and pomegranate arils to the bowl. Toss very gently.
- Transfer the salad to a serving bowl or plates. Scatter the crumbled feta cheese over the top just before serving.
Notes
Ensure greens are thoroughly dry before dressing to prevent dilution. The Dijon mustard and honey are key to creating a viscous dressing that clings to the leaves. For canned mandarins, ensure they are well-drained.
