Healthy Strawberry Chia Seed Oat Scones

Ingredients
  

  • 2 cups rolled oats whole, not quick-cooking
  • 1.5 cups all-purpose flour can use 1-to-1 GF blend or white whole wheat
  • 0.5 cup brown sugar packed
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.25 cup coconut oil melted
  • 0.5 cup almond milk or milk of your choice
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries roughly chopped into small pieces
  • 0.25 cup chia seeds whole

Method
 

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the rolled oats, flour, brown sugar, baking powder, and salt until well combined and the brown sugar has no lumps.
  3. In a separate medium bowl, whisk together the melted coconut oil, almond milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix with a spatula or wooden spoon until just combined. Avoid over-mixing.
  5. Gently fold in the chopped fresh strawberries and the whole chia seeds until they are evenly distributed.
  6. Using your hands or a large spoon, scoop large, rustic mounds (6-8 total) onto the prepared baking sheet. Alternatively, pack into a muffin tin or shape into a thick circle and cut into wedges.
  7. Bake for 18–22 minutes until the scones are golden brown on top and a toothpick inserted into the center comes out clean.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

To make these vegan, use a non-dairy milk as listed. To make them gluten-free, use certified gluten-free oats and a 1-to-1 GF flour blend.
