Ingredients
  

The Aromatics
  • 1 tbsp sesame oil toasted
  • 4 cloves garlic minced
  • 1 inch fresh ginger grated
  • 2 stalks green onions white and green parts separated
The Soup Base
  • 4 cups vegetable broth
  • 2 tbsp soy sauce low sodium
  • 1 tsp rice vinegar
Add-ins
  • 2 cups carrots sliced into rounds
  • 2 packs ramen or rice noodles discard seasoning packet
  • 2 cups spinach or bok choy
  • 1 tsp chili flakes to taste

  • Medium pot
  • Chef's knife

Method
 

  1. Heat sesame oil in a pot. Sauté garlic, ginger, and scallion whites for 2 minutes until fragrant.
  2. Add vegetable broth, soy sauce, and carrot slices. Bring to a boil.
  3. Reduce heat and simmer for 5-7 minutes until carrots are tender-crisp.
  4. Add noodles and spinach. Cook according to noodle package instructions (usually 3 minutes).
  5. Stir in rice vinegar. Taste and adjust seasoning with salt or more soy sauce.
  6. Serve hot, garnished with green onion tops, cilantro, and red chili flakes.

Notes

Store noodles separately from broth if you plan to have leftovers. Add tofu or soft-boiled eggs for extra protein.
