Harry Potter's Frozen Butterbeer

Ingredients
  

Frozen Slush Base
  • 4 cups cream soda chilled
  • 0.5 cup butterscotch syrup plus more for garnish
  • 1 tsp butter extract imitation flavor
  • 4 cups ice cubes
  • 1 pinch salt
Foam Topping
  • 1 cup heavy whipping cream very cold
  • 2 tbsp powdered sugar
  • 0.5 tsp vanilla extract
  • 1 tbsp butterscotch syrup for the foam mixture

  • Electric hand mixer or stand mixer
  • Measuring cups and spoons
  • Glass mugs

Method
 

  1. Place serving mugs in the freezer to chill completely.
  2. In a mixing bowl, combine heavy cream, powdered sugar, 1 tbsp butterscotch syrup, and vanilla extract.
  3. Whip the cream mixture until soft peaks form. It should be thick but pourable. Refrigerate.
  4. Place ice cubes in a blender and pulse briefly to crush into smaller chunks.
  5. Add cream soda, 1/2 cup butterscotch syrup, butter extract, and salt to the blender.
  6. Blend on high for 30-45 seconds until a slushy texture is achieved. Add more ice if too thin.
  7. Pour the slush into the chilled mugs, filling about 3/4 full.
  8. Spoon the whipped topping gently over the slush.
  9. Serve immediately with a straw.

Notes

For a grown-up version, add a shot of rum or butterscotch schnapps to the blender mix. Consume quickly to avoid separation.
