Method
- Place serving mugs in the freezer to chill completely.
- In a mixing bowl, combine heavy cream, powdered sugar, 1 tbsp butterscotch syrup, and vanilla extract.
- Whip the cream mixture until soft peaks form. It should be thick but pourable. Refrigerate.
- Place ice cubes in a blender and pulse briefly to crush into smaller chunks.
- Add cream soda, 1/2 cup butterscotch syrup, butter extract, and salt to the blender.
- Blend on high for 30-45 seconds until a slushy texture is achieved. Add more ice if too thin.
- Pour the slush into the chilled mugs, filling about 3/4 full.
- Spoon the whipped topping gently over the slush.
- Serve immediately with a straw.
Notes
For a grown-up version, add a shot of rum or butterscotch schnapps to the blender mix. Consume quickly to avoid separation.
