Dough Base
  • 2.5 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 cup unsalted butter frozen and grated
  • 1 cup buttermilk cold
Mix-ins
  • 1 cup sharp cheddar cheese shredded
  • 1 cup cooked ham diced small
  • 1 cup fresh baby spinach finely chopped
  • 0.25 cup green onions sliced

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Whisk flour, baking powder, salt, and garlic powder in a large bowl.
  3. Cut in the frozen grated butter until the mixture resembles coarse crumbs.
  4. Stir in the diced ham, shredded cheese, chopped spinach, and green onions.
  5. Gradually add buttermilk, stirring until a shaggy dough forms. Do not overwork.
  6. Turn dough onto a floured surface, fold 3 times for layers, and pat to 1-inch thickness.
  7. Cut into rounds using a biscuit cutter and place on the baking sheet.
  8. Bake for 18-20 minutes until golden brown. Serve warm.

Notes

To get the best rise, do not twist the biscuit cutter. For a glossy finish, brush the tops with buttermilk before baking. Store leftovers in the fridge for up to 4 days.
