Ingredients

Dry Ingredients
  • 2.5 cups all-purpose flour
  • 4 tsp baking powder
  • 2 tsp sugar
  • 1 tsp salt
Mix-ins & Wet
  • 2 cups buttermilk cold
  • 1 cup cooked ham diced
  • 1 cup cheddar cheese shredded
  • 0.5 cup unsalted butter 1 stick, melted

Equipment

  • 8x8 Baking Dish
  • Mixing Bowl
  • Whisk
  • Spatula

Method

  1. Preheat oven to 450°F (230°C). Melt the stick of butter and pour it into an 8x8 or 9x9 inch square baking dish.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. Stir in the diced ham and shredded cheese until coated with the flour mixture.
  4. Pour in the cold buttermilk and mix until just combined. The dough will be wet and sticky.
  5. Pour the batter over the melted butter in the baking dish. Use a spatula to spread it evenly to the edges.
  6. Use a knife to cut the dough into 9 even squares (cuts will not stay perfect, this is fine).
  7. Bake for 20-25 minutes until the tops are golden brown.
  8. Let cool for 5 minutes before serving to allow butter to absorb.

Notes

If you don't have buttermilk, mix 2 cups of milk with 2 tablespoons of vinegar or lemon juice and let sit for 5 minutes.
