Ingredients
  

Chocolate Crust
  • 1.5 cups chocolate sandwich cookie crumbs
  • 3 tbsp unsalted butter melted
Cheesecake Filling
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 tsp lime zest optional
  • few drops neon green gel food coloring
Topping
  • 1 cup heavy whipping cream cold
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 2 tbsp red and green sprinkles

Equipment

  • 12-cup Muffin Tin
  • Cupcake liners
  • Hand mixer or stand mixer
  • Mixing bowls
  • Piping bag and star tip (optional)

Method
 

  1. Preheat oven to 325°F (163°C) and line a muffin tin with liners.
  2. Mix cookie crumbs and melted butter. Press into liners and bake for 5 minutes. Cool.
  3. Beat softened cream cheese and sugar until smooth. Mix in eggs one at a time, then vanilla and lime zest (if using).
  4. Add green food coloring to achieve desired Grinch color. Pour batter over crusts.
  5. Bake for 15-18 minutes until set but jiggly in center. Cool in oven with door cracked for 20 minutes, then chill in fridge for at least 2 hours.
  6. Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
  7. Pipe whipped cream onto chilled cheesecakes and top with sprinkles before serving.

Notes

Ensure cream cheese and eggs are at room temperature for a smooth batter. Do not overmix after adding eggs to prevent cracking.
