Grilled BBQ Chicken and Slaw Wrap

Ingredients
  

BBQ Chicken
  • 2 cups cooked chicken breast shredded
  • 0.75 cup BBQ sauce plus extra for serving
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 1 tbsp olive oil
Creamy Coleslaw
  • 2 cups cabbage mix shredded (green, red, and carrots)
  • 0.25 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 0.25 tsp celery seed
  • 1 pinch salt and pepper to taste
Wraps
  • 4 large flour tortillas burrito size
  • 0.5 cup shredded cheese optional (Cheddar or Monterey Jack)
  • 1 dash cooking spray for grilling

Method
 

  1. In a bowl, whisk mayo, apple cider vinegar, honey, celery seed, salt, and pepper. Toss in the cabbage mix until fully coated. Set aside.
  2. In a skillet over medium heat, warm the olive oil. Add the shredded chicken, paprika, and garlic powder, tossing for 2 minutes.
  3. Pour the BBQ sauce over the chicken and simmer for 3-4 minutes until the sauce is sticky and the chicken is fully coated. Remove from heat.
  4. Warm the tortillas in the microwave for 15 seconds so they are pliable and don't tear.
  5. Place a scoop of warm BBQ chicken in the center of a tortilla, top with cheese (if using) and a scoop of coleslaw.
  6. Fold the sides of the tortilla inward, then fold the bottom up and roll tightly to form a burrito-style wrap.
  7. Heat a grill pan or skillet over medium-high heat. Spray lightly with oil and place the wraps seam-side down.
  8. Grill for 2-3 minutes per side until golden brown and crispy. Cut in half and serve immediately.

Notes

Always place the wrap seam-side down in the pan first to seal it shut and prevent the filling from falling out while you eat.
