Greek Style Spinach and Feta Quesadillas

Ingredients
  

Main
  • 4 large flour tortillas
  • 1 tbsp olive oil plus more for brushing
  • 2 cups fresh spinach chopped
  • 0.5 cup red onion diced
  • 0.5 cup red bell pepper diced
  • 1 clove garlic minced
  • 0.5 tsp dried oregano
Cheeses
  • 1 cup mozzarella cheese shredded
  • 0.5 cup feta cheese crumbled
  • 0.25 cup kalamata olives sliced, optional

  • Large non-stick skillet
  • Chef's knife
  • Cutting board
  • Spatula

Method
 

  1. Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper for 3 mins.
  2. Add garlic and spinach. Cook for 1-2 mins until spinach wilts. Remove from heat.
  3. Lay out tortillas. Sprinkle half the mozzarella on one side of each tortilla.
  4. Top with the vegetable mixture, crumbled feta, oregano, and olives.
  5. Top with remaining mozzarella and fold tortilla over (or top with second tortilla).
  6. Wipe skillet clean. Heat over medium. Brush with a little oil.
  7. Cook quesadillas for 3-4 minutes per side until golden brown and cheese is melted.
  8. Let rest for 1 minute before slicing into wedges.

Notes

Serve with a side of Tzatziki sauce for dipping. If using fresh tomatoes instead of peppers, remove the seeds to prevent sogginess.
