Ingredients
  

Mushroom Duxelles
  • 10 oz cremini mushrooms cleaned
  • 1 large shallot minced
  • 2 cloves garlic minced
  • 1 tbsp fresh thyme leaves
  • 2 tbsp unsalted butter
Beef and Assembly
  • 1 lb beef tenderloin (filet mignon) cut into 1-inch cubes
  • 2 sheets puff pastry thawed
  • 2 tbsp Dijon mustard smooth
  • 1 tbsp olive oil for searing
  • 1 egg beaten for wash
  • Coarse sea salt for garnish
  • Fresh thyme sprigs for garnish

Method
 

  1. Finely chop mushrooms in a food processor. Sauté shallots and garlic in butter until soft. Add mushrooms and thyme; cook over medium heat until all liquid evaporates and mixture is dry (duxelles). Cool completely.
  2. Season beef cubes well with salt and pepper. Sear quickly in hot oil/butter (20 seconds per side) just to brown. Remove and cool. Brush seared beef with Dijon mustard.
  3. Preheat oven to 400°F (200°C). Roll out puff pastry and cut into squares large enough to wrap beef.
  4. Place a teaspoon of duxelles on a pastry square, top with a beef cube, and wrap tightly, pinching seams to seal.
  5. Place seam-side down on a lined baking sheet. Brush with egg wash, score tops lightly, and sprinkle with coarse salt.
  6. Bake for 15-18 minutes until pastry is golden brown. Let rest 5 minutes before garnishing with thyme and serving.

Notes

The key to crispy pastry is ensuring the mushroom mixture (duxelles) is cooked completely dry before assembling. If it is wet, the pastry will become soggy. These are best served immediately.
