- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Arrange thick-cut bacon in a single layer and bake for 10-12 minutes until perfectly crispy, turning once. Drain on a paper towel-lined plate.
- Wash and *completely* dry the baby arugula. In a mixing bowl, toss the arugula with 1/2 tsp of olive oil and a pinch of salt and pepper.
- Cut the Focaccia loaf horizontally with a sharp serrated knife. Brush both cut sides with extra virgin olive oil and broil on high for 1-2 minutes until deeply golden.
- Assemble the sandwich: Spread a thin layer of balsamic glaze on the bottom Focaccia half. Layer with crispy bacon, top with the dressed arugula. Drizzle the balsamic glaze generously over the fillings and the top Focaccia half. Firmly close the sandwich.
- Dust the entire final sandwich with flaky sea salt and garnish with a fresh rosemary sprig and sliced cherry tomato if desired, define as shown in our magnificent cross-section photo (image_4.png) defined. Serve immediately.
