Gooey Cinnamon Swirl Quick Bread

Ingredients
  

Bread Batter
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter melted
  • 0.5 cup whole milk room temperature
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
Cinnamon Swirl Filling
  • 0.5 cup unsalted butter melted
  • 1 cup light brown sugar packed
  • 2 tbsp ground cinnamon
  • 0.25 tsp salt
Optional Sugar Topping
  • 1 tbsp granulated sugar
  • 1 tsp ground cinnamon

Equipment

  • 9x5 inch loaf pan

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or line with a parchment paper sling.
  2. In a small bowl, make the filling: stir together 1/2 cup melted butter, brown sugar, 2 tbsp cinnamon, and 1/4 tsp salt. It will form a thick, viscous paste. Set aside.
  3. In a large bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and 1/2 tsp salt.
  4. In a medium bowl, whisk the 1/2 cup melted butter, milk, eggs, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients. Fold with a spatula *just* until combined. Do not overmix; a few lumps are fine.
  6. Spread half the batter into the bottom of the prepared loaf pan.
  7. Carefully spoon the thick cinnamon filling over the batter and spread gently, avoiding the edges.
  8. Top with the remaining batter and spread to cover the filling.
  9. (Optional) Mix the 1 tbsp sugar and 1 tsp cinnamon and sprinkle over the top of the batter.
  10. Bake for 50-60 minutes, or until a wooden skewer inserted in the center comes out clean (a few moist crumbs are fine, but no wet batter).
  11. Let the bread cool in the pan on a wire rack for 20 minutes before using the parchment sling to remove it. Cool further before slicing with a serrated knife.

Notes

If the top is browning too quickly, loosely tent with foil for the last 15-20 minutes of baking. Store in an airtight container at room temperature for up to 4 days.
