Ingredients
  

Main Dish
  • 1.5 lbs baby potatoes washed and dried thoroughly
  • 3 tbsp extra virgin olive oil
  • 4-5 sprigs fresh thyme leaves stripped
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper freshly ground
  • 4 oz feta cheese cut into 1/2-inch cubes (do not pre-crumbled)
Garnish
  • 1 large branch fresh thyme for garnish
  • 1 squeeze lemon juice optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Ensure potatoes are thoroughly dried. In a bowl, toss potatoes with olive oil, thyme leaves, salt, and pepper until coated.
  3. Arrange potatoes in a single layer in your pre-heated or prepared baking dish or on a baking sheet.
  4. Roast for 25-30 minutes, tossing once halfway, until golden-brown and tender.
  5. Remove dish from oven and arrange feta cubes over the potatoes.
  6. Return to the oven and roast for an additional 5-7 minutes, until feta is melted and slightly browned.
  7. Remove from oven. Arrange the large fresh thyme branch over the top as a final garnish and serve immediately.

Notes

Using a terracotta dish will help hold the heat and create a rustic presentation. For extra crispiness, roast on a metal baking sheet first, then transfer to a serving dish with feta for the final steps.
