- Pour the Rice Chex cereal into a very large bowl and set aside.
- In a microwave-safe bowl, combine chocolate chips, peanut butter, and butter. Microwave on high for 1 minute, stir, and continue in 30-second intervals until smooth.
- Stir the vanilla extract into the melted chocolate mixture.
- Pour the melted chocolate mixture over the cereal. Gently fold with a spatula until cereal is evenly coated.
- Divide powdered sugar and coated cereal into two large Ziploc bags (or do it all in one 2-gallon bag). Seal tight and shake vigorously until cereal is coated white.
- Spread the mixture onto a baking sheet lined with parchment paper to cool and set for 15 minutes.
- Once cooled, toss in a large bowl with gluten-free pretzels, M&Ms, and nuts. Store in an airtight container.
Notes
Always double-check labels on pretzels and chocolate candies to ensure they are processed in a gluten-free facility if you have Celiac disease. Seasonal shaped chocolates often contain wheat binders.
