Ingredients
  

Coating Base
  • 9 cups Rice Chex cereal ensure gluten-free
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup creamy peanut butter
  • 0.25 cup unsalted butter
  • 1 tsp vanilla extract
  • 1.5 cups powdered sugar
Mix-ins
  • 1 cup gluten-free pretzels mini twists or sticks
  • 1 cup holiday M&Ms red and green
  • 0.5 cup peanuts optional

Equipment

  • Large microwave-safe bowl
  • Gallon-sized Ziploc bags
  • Baking sheet
  • Rubber spatula

Method
 

  1. Pour the Rice Chex cereal into a very large bowl and set aside.
  2. In a microwave-safe bowl, combine chocolate chips, peanut butter, and butter. Microwave on high for 1 minute, stir, and continue in 30-second intervals until smooth.
  3. Stir the vanilla extract into the melted chocolate mixture.
  4. Pour the melted chocolate mixture over the cereal. Gently fold with a spatula until cereal is evenly coated.
  5. Divide powdered sugar and coated cereal into two large Ziploc bags (or do it all in one 2-gallon bag). Seal tight and shake vigorously until cereal is coated white.
  6. Spread the mixture onto a baking sheet lined with parchment paper to cool and set for 15 minutes.
  7. Once cooled, toss in a large bowl with gluten-free pretzels, M&Ms, and nuts. Store in an airtight container.

Notes

Always double-check labels on pretzels and chocolate candies to ensure they are processed in a gluten-free facility if you have Celiac disease. Seasonal shaped chocolates often contain wheat binders.
